Kerry's Buffalo Brisket
Wild -T- Bison Farm Ingredients:
6 lbs Bison brisket
1 cup brown sugar
3.5 oz. Liquid smoke
1/3 cup ketchup 7 oz.
A-1 Steak sauce
2 Tablespoons Worcestershire
Instructions: Place brisket in baking dish. Pour liquid smoke and A-1 sauce into a 3 cup container and fill with water to 2.5 cup level. Pour over brisket. Cover with foil. Bake at 300 degrees for 30 minutes and then 275 degrees for 3 hours. Stand to cool. Pour off drippings (save drippings) and refrigerate overnight. Thinly slice brisket. Mix brown sugar, ketchup and Worcestershire sauce. Heat to melt; add drippings (skim off grease before adding); heat again. Pour over brisket and heat through.
