The nutritional label to the right is the result of a 1996 study by Dr. Marty Marchello of North Dakota State University. The nutritional labels exhibit the nutrient composition of bison fed concentrate diets. A 2005 study conducted by Alberta Agriculture, Food and Rural Development shows detailed nutrient composition in various muscle cuts of bison bulls and bison heifers, provided by the Canadian Bison Association. You can read the full study here.
